Butternut Squash Purees for Babies
Pumpkin and squash are my favourite first vegetables. They have a lovely
sweetness and are easily digested by delicate little stomachs. Use this recipe for beets, green beans, snow peas and peeled rutabaga and turnip, too.
PREP TIME: 10 mins
COOK TIME: 30 mins
1 butternut squash, peeled, seeded, and cut into large cubes
1 Put the squash in a steamer and steam, covered, over boiling water for 30 minutes until completely soft. Reserve the steam water. If using a blender with a plastic container, let the squash cool completely before blending.
2 Transfer the squash to a blender and add enough of the reserved steam water to cover it halfway. Blend for 1 minute until smooth. Serve warm, reheating if necessary.
