Rutabaga & Bok Choy
In this beautiful dish, the green bok choy creates visual appeal, while its clean,
fresh flavor brightens up the more sombre rutabaga.
MAKES: 4 servings
PREP TIME: 10 mins
COOK TIME: 25 mins
1 pound rutabaga, peeled and diced
2½ ounces bok choy, cut into thin strips
1 Put the rutabaga in a steamer and steam, covered, over boiling water for 20
minutes until completely soft, then remove from the steamer and set aside.
Reserve the steam water.
2 Put the bok choy in the steamer and steam, covered, over boiling water for 3
minutes until wilted. Reserve the steam water. If using a blender with a plastic
container, let the vegetables cool completely before blending.
3 Transfer the vegetables to a blender and pulse for 1 minute until the mixture
forms a lumpy purée, slowly adding a little of the reserved steam water if
necessary. If a smoother consistency is desired, blend for a little longer. Serve
warm, reheating if necessary.
