Fava Bean & Pumpkin Purée


Sweet pumpkin goes well with anything; combined with fresh fava beans, it’s
simply amazing. Fava beans are a particularly special treat when they’re in
season because they’re so fresh.
MAKES: 4 servings
PREP TIME: 10 mins, plus making the pumpkin purée
COOK TIME: 10 mins
16 fava bean pods
2 portions pumpkin purée
1 Slit each bean pod along its seam and pop the beans out. Bring a small
saucepan of water to a boil over high heat, add the beans and boil for 10
minutes until soft. Remove from the heat, drain, and let cool, then peel the
beans and discard the tough skins.
2 Transfer the beans to a blender and add enough water to cover them halfway.
Blend for 1 minute until smooth.
3 Put the pumpkin purée and 1–2 tablespoons water in a saucepan and heat over
medium heat until warm, then stir in the fava bean purée. Serve warm.
STORAGE: Refrigerate the cooled purée for up to 3 days or freeze in cubes for up to 3 months.
